Chai tea lattes and fresh-baked cookies––two ways into my heart. 

Julia Voss is a sugar-addicted, cookie-loving, baker-extraordinaire who just so happens to be my roommate (lucky me). From the day we moved in together, I have always known Julia to be baking some sort of cookie. And if she isn’t baking her own there are always some in her cupboard, dough in the freezer or an Insomnia delivery man just a click away.

One of my new favorite cookies was created as the result of a high-school science experiment. She was trying to make a chocolate chip cookie, but ran out of chocolate. She was inspired by Taylor Swift’s Christmas chai cookie, but wanted to make her own recipe that contained a lot less nutmeg and didn’t remind her of Christmas when she wanted to eat them in July. It took her fifty rounds of experiments in the kitchen, but she finally created the perfect chai-latte cookie. Taken to a new level by Trader Joe’s Spicy Chai Tea Latte Mix, perfect is the word to describe these snickerdoodles. And yes-- you HAVE to use the Trader Joe’s mix.

Chai Tea I-Love-You-A-Latte Cookies with a Spicy Glaze

Ingredients For the Cookies:

  • 2 sticks of unsalted butter

  • 4 tsp of vanilla

  • 2 eggs

  • 1 cup of vegetable oil

  • 2 scoops of Trader Joe’s Spicy Chai Tea Latte Mix

  • 2.5 tsp of cinnamon

  • 2.5 tsp of nutmeg

  • 2 tsp of baking soda

  • 1 cup of sugar

  • ½ cup of brown sugar

  • 1 tsp of salt

  • 4 cups of flour

Ingredients For the Frosting:

  • 1 cup of powdered sugar

  • 1 tsp of nutmeg

  • 2 tsp of cinnamon

  • ⅛ tsp of salt

  • ½ tsp of vanilla

  • A splash of cream, milk, or water

How To Prepare The Cookie of Your Dreams:

  1. Preheat your oven to 350 degrees.

  2. Cream the butter with a fork in a mixing bowl.

  3. Mix the vanilla into the butter.

  4. Add one egg at a time into your butter-vanilla mixture.

  5. Mix the oil into your concoction.

  6. In a separate bowl, measure and combine all your dry ingredients.

  7. Slowly stir your wet ingredients into the dry ingredients.

  8. Once you have stirred it all together, your dough should come together nicely. You can then form balls with your dough at the size you prefer.

  9. Bake for about 8 minutes, until the underside is golden.

  10. Pull your cookies and allow them to cool as you prepare your frosting.

How To Prepare Your Glaze:

  1. Measure out and combine all your dry ingredients.

  2. Add in your vanilla.

  3. Splash in the milk, cream, or water and mix everything together. The consistency should be thick and sticky.

  4. Smear your frosting over your cookies with the back of a spoon while they are still warm.

  5. Enjoy warm, preferably with a cup of coffee and someone you love. Happy Valentine’s Day!
